Mushrooms are often used in Paleo and other low-carb diets, but there are some exceptions. Portobello mushrooms are one of those exceptions. This yummy dish includes sautéed onion, garlic, and peppers that add a nice flavor and then the mushrooms get thrown in to help cook down the sauce and thicken it up. It also includes some soy sauce. Now you don't want too much of this, though because soy has a salty taste that can easily overpower things so I like to use maybe 1/2 cup or less if I'm making this for myself but if you're eating this with others, up that amount to 1/2 cup or even 3/4 cup!
